Sparta Beef steak in a pan

  • Sparta Angus Sirloin
  • Coarse Salt
  • Pepper
  • Garlic
  • Olive Oil
  • Butter
  • Fresh thyme
  • Tomatoes on the vine


    1. Cut the sirloin into steaks - approximately 3 – 4 cm thick
    2. Season with coarse salt and pepper
    3. Crush garlic with a flat knife
    4. Heat olive oil in a cast iron skillet over a high heat
    5. Place steaks in hot skillet
    6. Allow to cook for approximately 3 minutes
    7. Ensure the one side is seared before turning the steak over – sear the side for another 3 minutes
    8. Render the sirloin’s fat by placing the steak upright in the skillet
    9. Add garlic, blocks of butter and fresh thyme
    10. Tilt the pan and baste the steaks with the fragrant butter
    11. Add the vine tomatoes into an oven dish. Drizzle olive oil over the tomatoes and add coarse salt and pepper. Roast for 10 – 15 minutes at 180 ⁰C.
    12. Take steak off the heat and let them rest. Slice steak and pair with warm or cold roasted vine tomatoes.
